**As a diabetic I aim to create recipes for those of us who have no or low sugar requirements, however I am not a doctor/nutritionist, thus consult your physician before using these recipes as we all know every diabetic’s body reacts differently**
White/Wheat Gluten free-Less Sugar Dinner Rolls-
Note: Dough made in the Bread Machine, but baked in the oven.
Adding Ingredients In Bread Machine: 5 minutes
Bread Machine’s Kneading Time: 1hr/12 minutes
Rise: 1 Hr
Baking: 20 minutes (or until golden brown crust)
Recipe Makes 24 Rolls, but I used half the dough to made handmade french type bread and a heart shaped dinner roll, lol
You will need (the obvious) ingredients but also important are Measuring cups/spoons/rubber spatula/ (2) 7 x 11 cookie sheets/ round cookie cutter or lid (the roundness/thickness of a dinner roll) a plate or bowl to switch dinner rolls to and something to store them in.
1 Egg (Room Temp)
1/4 cup vegetable oil
Mix brown sugar with regular sugar to equal 1/2 cup
1/2 tsp sea salt
3 1/4 cups regular bread flour
1 cup Kings stone ground wheat
2 1/2 tsp quick rise yeast
If you wish you can completely substitute regular sugar with 1/2 cup brown sugar and 1/4 cup vegetable oil with 1/4 cup olive oil. DO NOT use fake sugars like splenda, sweet n low or equal as the yeast likes real sugar to rise.
Diabetics: HONEY makes your sugar levels rise, so avoid using it!
Remove Bread Machine Pan, place on counter (insure kneading blade is attached properly). Add ingredients to the bread machine pan in the above order. Put the Bread machine pan back in the bread machine, click down, close lid and press dough program. At first beep, use your rubber spatula to push all dough on sides back into the dough-ball. Final Beep, let the dough stand for an hour in the bread machine pan. After dough has doubled in size preheat your oven to 350 degrees. Spread flour on large dry cutting board or counter. Wearing Oven Mitts shake and dump the dough onto the floured surface. Pull the plastic blade from the dough and set aside. Begin spreading dough with palms pushing it to it’s outer edges until it is the thickness of your first finger throughout. Spray Pam Cooking Spray On your cookie sheets.
Take your lid/cutter and squish down gently while pulling away the outer dough around the lid/cutter. The dough inside should drop out easily, then you can use your hands if it needs reshaping. Place the shaped dough on the cookie sheet (about 12 per cookie sheet) leaving about a finger width space between them.
Place cookie sheets with dinner roll shaped dough on them in the oven for 20-30 minutes or until golden brown on top.
Wearing Oven Mitts remove the dinner rolls from the oven and allow to cool to desired temperature.
Place in basket or bowl for serving or in a zip-lock bag and refrigerate for storage. This recipe has eggs in it, so refrigerate any un-used/uneaten portions immediately.
